7. Burgers, fries and ice cream

from a Snuffy's. DH insisted on a late lunch out as a treat on the way home from a doctor appointment, and we ate enough to count for supper, too.

However, I then made a double batch of lentil/sausage soup and canned about half of it. I ate a small taster bowl as a treat when it was done; much better than the diner. Lentil soup is great to use up refrigerator bibs and bobs - one of the things I threw in there was the better part of a container of pico de gallo (drained), and it really perks it up. The base is diluted beef broth, but I also threw in nearly a pint of good chicken broth, leftover from canning chickens. My personal kitchen mantra is "This is a meal that will never come again". You never have the same leftovers twice.

We might have the rest of it tomorrow, but I'll likely can it all. The whole batch should be 10-12 meals worth. I already have tomorrow's supper planned for something else and have the ingredients already.
