Antipasto salad, but with greens. Has Genoa salami, stuffed green olives, artichokes that have been marinated in olive oil and herbs, red onion (sliced thinly on the mandoline), cucumber, and tomatoes. Homemade lemon-scallion vinaigrette.
Cup of red lentil-coconut soup.
Half a breaded cod sandwich with lettuce, tomato, and tartar sauce.
Pomegranate kombucha.
Dessert: 2 chocolates from the box the RG had sent to me from Italy.

(4,644 posts)especially since you've been "off your feed" for more than a few days? But while you're hungry, nothing sounds good. Or at least, nothing sounds better than anything else. So, today, I've got a chicken veggie bowl, southwestern style. It's been pretty much started, I'll add more veggies to it and anything else that seems right. Also decided if it turned out as bad as the sloppy joes I made the other night, I've got a chicken caesar roll up to fall back on. Plus, little garlicky, rosemary potatoes. Surely out of all that, something will taste good enough to finish. My Mom's funeral is tomorrow. Hopefully my emotions and my body begin coming back more to norm shortly afterwards. My cooking has definitely suffered from the shock.

(1,143 posts)Chopped romaine, spring mix, chopped red onion, radishes, broccoli, green peas, pickled beets. Tossed with homemade walnut-balsamic dressing. Left over bean loaf and chickpeas for protein on top. Toasted baguette with olive tapenade. Iced green tea with lemon. Italian sesame seed cookies for dessert. Cheers! 🥂

(564 posts)from a Snuffy's. DH insisted on a late lunch out as a treat on the way home from a doctor appointment, and we ate enough to count for supper, too.
However, I then made a double batch of lentil/sausage soup and canned about half of it. I ate a small taster bowl as a treat when it was done; much better than the diner. Lentil soup is great to use up refrigerator bibs and bobs - one of the things I threw in there was the better part of a container of pico de gallo (drained), and it really perks it up. The base is diluted beef broth, but I also threw in nearly a pint of good chicken broth, leftover from canning chickens. My personal kitchen mantra is "This is a meal that will never come again". You never have the same leftovers twice.
We might have the rest of it tomorrow, but I'll likely can it all. The whole batch should be 10-12 meals worth. I already have tomorrow's supper planned for something else and have the ingredients already.
