Raley's nearby has frozen mirepoix. Onions, carrots and celery. No spoilage when I can't use them fast enough.

You've got the veggies already!
Just make sure there's onion for sweetness.

Defrost, saute, add chicken and broth.

Cilantro at the end.

I use turkey also.
