Related: About this forumI want to make soup with left over chicken fajita meat. Help.
Our local Mexican Restaurant is good, cheap and the portions are huge. Im thinking of putting a big portion of the chicken meat and the accompanying veggies in a pot and add lots of chicken broth. Good Idea? Any suggestions would be appreciated. I have a bad habit of making easy things hard.

(1,463 posts)Do exactly what you plan and add as much of your favorite salsa as you like. I think your soup will be fantastic! You can top it with sour cream, cheese, guacamole, jalapeños, and tortilla strips. None of those available? Enjoy as is 🤗

(24,518 posts)The chicken breast is a nice, nice bonus too. And be sure to 'salt' w/ no salt substitute, and don't overwhelm w/ other spices. You are eating the chicken, flavored w/ a tiny bit of sodium free salt, along w/ the veggies. To add even more flavoring, I use a tomato paste in addition, to add to the flavoring too. Don't overwhelm the soup w/ too much liquid, as you are making a veggie soup, not a watered-down soup. And, that's it. Oh, and if I have leftovers in the fridge, I add to the soup too (and I use a crock pot too, so it'll simmer all day, keep warm).
You got me hungry now, I just might make such a soup now, ha ha heh!
Good luck on your creation, I think that you can't go wrong. Now if you get fresh veggies, it'll take a little longer to cook (I have to watch this as my SO just had dental work done, so we got to watch the 'crunchiness' of the veggies.
A crockpot's worth of food will go a long way (unless you have a small crockpot, but then you'll be limited on what you can put into the smaller crockpot).

(15,162 posts)Raley's nearby has frozen mirepoix. Onions, carrots and celery. No spoilage when I can't use them fast enough.
You've got the veggies already!
Just make sure there's onion for sweetness.
Defrost, saute, add chicken and broth.
Cilantro at the end.
I use turkey also.

(40,546 posts)Does the Cilantro get cooked? Or just add it when served? I hear cilantro is an acquired taste.. I acquired it long ago. Damn Im looking forward to messing up my wifes kitchen.
