3. My veggie soup, a random selection of 5-6 different canned veggies that I have on hand, is one of my favorites.

The chicken breast is a nice, nice bonus too. And be sure to 'salt' w/ no salt substitute, and don't overwhelm w/ other spices. You are eating the chicken, flavored w/ a tiny bit of sodium free salt, along w/ the veggies. To add even more flavoring, I use a tomato paste in addition, to add to the flavoring too. Don't overwhelm the soup w/ too much liquid, as you are making a veggie soup, not a watered-down soup. And, that's it. Oh, and if I have leftovers in the fridge, I add to the soup too (and I use a crock pot too, so it'll simmer all day, keep warm).

You got me hungry now, I just might make such a soup now, ha ha heh!

Good luck on your creation, I think that you can't go wrong. Now if you get fresh veggies, it'll take a little longer to cook (I have to watch this as my SO just had dental work done, so we got to watch the 'crunchiness' of the veggies.

A crockpot's worth of food will go a long way (unless you have a small crockpot, but then you'll be limited on what you can put into the smaller crockpot).
