There's an algorithm for VINs with a check digit. You just choose a number above the anticipated production run, and make a new VIN plate. It won't conflict with any original units and won't come back as stolen.

Of course, the original VIN is still on the firewall, the sub-frame, and some other interesting places, but that's a problem for the sucker who buys it.
