Were eating lots of watermelon this summer, too. Im finishing the latest one with breakfast. My husband saw a new way to cut them with less waste. He cuts just a thin slice from each end of the melon so it stands tall on the counter, then proceeds to to cut away the rind with long cuts from top to bottom. Pretty soon, he has a bare nekkid pretty in pink watermelon. Turns it on its side and cuts it into rounds, stacks several rounds and slices them into bite-sized chunks. Packs them in stackable containers and into the fridge.
Sounds crazy, but it works for him.
Me, Im used to smiling and nodding at lots of ideas he gets into his head. Hes a biochemist. No major disasters in our years together starting in summer of 1975, so I figure hes a keeper. And they said it wouldnt last! Some folks were quite scandalized when I moved in with him in 77 after college graduation. We married in 1980 and are still living our happily-ever-after, retired now, and returned from our 30 year exile in FloraBama to our beloved mountains in NC. Talk about a long and winding road.
Anyway, thanks for the reminder to add watermelon to the grocery list.
