2. Here's what I would do (I'm in zone 7 too)

Digging it up now is fine. Take the sharp end of a shovel and split the hosta in half, or into 3 pieces or 4. Replant the hostas where you want, in holes that have been watered, and then water the plant good when you get it in the ground. They should be fine after being wilty a day or two. I've had to split mine up like this and it never hurts them.
