fresh greens with marinated bean salad, cold pickled beets, tofu with cilantro-ginger paste. But honestly, I still love hot brothy soup in hot weather. I could eat it everyday. They say hot tea is good for both hot and cold temps because it makes you warm in the winter, makes you sweat and therefore cools you during hot weather. Same with soup.
