4. Manhattan Clam Chowder

Sweated in evoo equal amounts of diced onion, celery, green pepper, and carrots. Added minced garlic, veggie broth, diced red potatoes, petite chopped tomatoes, tbsp of tomato paste, bottled clam juice and a bay leaf. Simmered covered until the potatoes and veggies were done. While the soup was simmering I steamed a dozen fresh clam, strained the liquor and processed the clams in my food processor to a course grind and added the clams and liquor to the soup. Turned off the heat and added a tied bunch of fresh thyme from my garden and fresh chopped parsley and let the herb perfume the broth before removing after a couple minutes. Salt and pepper to finish. I can only eat this soup with oyster crackers. A habit since childhood. Happy Father’s Day! 🍻Cheers!
