Albeit you might be able to use commercial soymilk (plain) yogurt if your grocer carries it as culture, which is what I was able to do. It came out okay, albeit I did not like the taste or texture.

I'll stick with 2% milk as I have for 14 years, using every technique you can think of. I also make Greek yogurt from half the yogurt batch.

But yes, nut milk varieties can be used.
