Posting early due to working late.

I made a whole grain salad for tonight, inspired by a cookbook I have by Lorna Sass called Whole Grains Every Day Every Way. One of the other authors I consulted said she was embarrassed to even include a chapter on this topic because it's so easy to make these salads with just what you have in the frig or the pantry.

This one has: Israeli couscous, which as you know is a larger kernal. Added chickpeas, tomatoes, sliced green pepper, scallion, minced red onion, and feta cheese. Because I was a little light on the feta, I added minced ham. I have an olive oil/lemon/apple cider vinegar vinaigrette on hand, so I'll use that. In addition, I chopped up parsley and cilantro for the herbs and toasted some sliced almonds.

Will toast half an artisan roll in the air fryer to go with it.

Ginger kombucha.

A few mandarin oranges to go with dark Chinese tea.

The author was right, though. These salads are easy. Later after work, I may post a few of her combos in another post on this thread.
