Sometimes our supermarket has them, other times there isn't even a blank spot on the shelf where they were.
Here's something I ran across, but haven't tried it yet.

How to Caramelize Onions in the Microwave (Alton Brown Method) rep: Thinly slice 2 pounds of yellow onions and place in a large glass bowl or Anyday dish.Initial Steam: Add a pinch of salt to draw out moisture. Microwave covered on high for 10 minutes to soften.Drain & Season: Remove the lid and drain the excess liquid. Stir in 4 tablespoons of butter (or oil) and a pinch of baking soda, which speeds up the caramelization process.Brown: Microwave uncovered for another 15–20 minutes, stirring every 5 minutes, until the onions are dark brown and jammy.
