The best varieties have a more complex flavor. By the way, we get color on Granny Smith here. They have a strong red blush. We are pretty far north, and the farther north, the longer the photo period. The longer the photo period the more anthocyanins a plant produces, because anthocyanins protect the plant tissue from sun damage. Anthocyanins give color to the fruit (and also to fall leaves which is why the fall colors are more intense in the North.) Anthocyanins also act as anti-inflammatory agents.
