3. I use a dedicated carbon steel popover pan to do yorkshire pudding.

I put the pan in the oven to preheat a little before the prime rib comes out. After I pull the roast to let it rest, I use a baster to add beef fat to the popover cups, then add the batter and bake. You do need to skewer them with a paring knife to let out steam or they’ll become gummy.
