What's for Dinner, Wed., July 8, 2026

Cold soup, which is red pepper and tomato with basil leaf slivers.
Tuna fish sandwich in a pita bread. Accompanied by banana pepper rings, black olives, cold celery sticks and crispy baby carrots.
Mango kombucha.

Dessert: green tea mochi.

My daughter brought me a jar of jerk marinade last month. Today, I marinated chicken drumsticks and baked them. I baked spicy maple sweet potato slabs and heated up a package of dirty rice I bought last week. I seriously might burst into flames!

I might have some frozen blueberries, just to bring the temperature down.

Steam-fried in evoo and veggie broth: chopped onion, yellow bell pepper, sliced carrots, broccoli, snow peas, sliced mushrooms and mined ginger and garlic. When done I stirred in cooked whole wheat pasta, garlic and hoisin sauce and air-fried tofu cubes before a final toss. Diced scallions to top after plating. Cheers!🥂
