I fell asleep before I could have last night's dinner! So I'll have it tonight.
I think working outside as much as I do takes most of my energy. I make the dinner, put it in the refrig or whatever's appropriate, and say I'll just rest for a little bit first and ZONK. I am out until 1 a.m.
It was:
Cold mushroom soup with chorizos bits and caramelized onions.
Cucumbers in tarragon cream sauce.
Tunafish sandwich on sourdough. Banana pepper rings and kalamatas.
It's all waiting in the frig until I get hungry.

I went with a friend and we enjoyed catching up
I made cheesecake earlier today and had a slice when I got home.

(1,999 posts)Steam-fried in evoo and veggie broth: onion, yellow bell pepper, sliced carrots, sliced mushrooms, cut asparagus and minced garlic. When done I blended in 3/4 of a block of mashed firm tofu, Jax Tofu seasoning, hot pepper flakes and chopped fresh parsley. Cheers!🥂

(1,881 posts)This was pretty easy with rotisserie chicken. While getting out the green onions, I saw a box of raspberries that would make a good dessert.

(1,118 posts)I call it Baked Farfalle Florentine, but it's really a poor man's lasagna. It has cottage cheese as opposed to ricotta and plenty of mozzarella, and fresh spinach in the sauce. A lot easier to prepare than lasagna: I mix the cooked pasta with the cooked sauce; dump roughly half in my baking pan; add a layer of mozzarella and cottage cheese; pop on the rest of the pasta/sauce mixture and more mozzarella cheese on top. I cover it with foil and bake at 375 for about 40 minutes. Unlike lasagna, I don't have to let it rest for 45 minutes after it comes out of the oven, it takes less time to cook as well as to prepare, and the ingredients are slightly cheaper. It's not quite as good as lasagna, I admit, but it is so much easier to make and still tastes pretty good.
Also, there was so much of it I don't have to cook tonight at all. We've got plenty of leftovers.
