What's for Dinner, Mon., March 30, 2026

Broccoli Wraps with Cilantro Cream Sauce.

Roasted broccoli with garlic, mixed with shredded cabbage for crispiness. Cilantro cream sauce is drizzled over the top. The sauce is a mixture of mayo, lime juice, and cilantro. The mayo is supposed to be thinned with water, but I'm thinking half 'n half or 2% milk might be a better choice.

I'm going to have some of the roasted broccoli in a wrap with sesame sauce, too.

The kinds of wraps are spinach, tomato, and flour.

Cherry tomato and cucumber salad with chopped red onion and vinaigrette.

Dessert is decaf coffee and banana nut bread.

Steamed brown rice and onions, with shimp and unsalted butter, basil, and garlic thrown in. Cresent rolls. Spinach salad with mushrooms and cherry tomatoes. Ice cream later.

Steam-fried in evoo and veggie broth: chopped onion, yellow bell pepper, cabbage, zucchini, sliced mushrooms, chopped kale and minced garlic. When done I stirred in jarred marinara sauce, black beans, cannellini beans, cooked whole wheat penne and gave it a good stir. Vegan parm on top after plating. Cheers! 🥂
