Applesauce Oatmeal Cake

This Applesauce Oatmeal Bread is moist full of flavor. Made with store-bought or homemade applesauce, and a few other pantry staple ingredients, this bread will be a hit with the whole family.

Ingredients
1 ½ cup granulated sugar
1 cup vegetable oil or coconut oil
2 ½ cups applesauce unsweetened preferably
4 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour plus more for the tops
1 cup rolled oats
1 teaspoon ground cinnamon
½ teaspoon salt
1 ½ teaspoon baking soda
1 teaspoon baking powder
Instructions
Preheat oven to 350 degrees. Line or grease 2 standard-sized loaf pans.
In a large bowl, whisk together sugar and oil.
Add applesauce, eggs, and vanilla; whisk until smooth.
Stir in flour, oats, salt, cinnamon, baking powder, and baking soda.
Divide batter into the two loaf pans and sprinkle with rolled oats.
Bake loaves for 40-45 minutes or until a knife is inserted in the center and comes out clean.
Cool for at least 15 minutes before slicing.
For the breakfast, I'll heat vegan maple sausage and frozen pancakes with maple syrup, pot of hot tea and a slice of the apple oatmeal bread

Next a toasted English muffin, whole grain with butter. Perhaps Ducky will join me (if his nose is working).
I'm extra creaky/achy this morning. Changing weather? Sometimes this feeling just passes with activity. My only set agenda today is a grocery pickup this afternoon. I'm hoping I'll be feeling better to carry it in.

(42,873 posts)Will skip breakfast and go straight to lunch.. Ill stuff the pepper with chopped celery, carrots, onions, chickpeas, and a little ground beef. Panko. Top it with Provolone.
Sweet potato fries and ketchup.
