What's for Dinner, Fri., Feb. 20, 2026

Chicken Cutlets with Sun-Dried Tomato Cream Sauce. Recipe is from Eating Well web site.

Has heavy cream (I'm using 1/2 'n 1/2 instead) and they recommend the sun-dried tomatoes be from a jar so the dish can be flavored with a little of the oil. Also has white wine and shallots. Parsley.

Baby arugula salad with shaved Parmesan and toasted walnuts. Homemade vinaigrette.

Kombucha, unflavored.

Dessert: sliced honey crisp apple.

Yesterday

Bean soup with the ham stock I made today and ham leftovers plus onion, carrot, celery and plenty of garlic.

Apple cobbler TJ made yesterday with a squirt of Reddi wip.

Chicken cutlets in a sun-dried tomato cream sauce. Ms K says she'd have done the deed for it!

We're probably eating out tonight-- I have a gallery opening to attend at dinner time ish, so it'll be easier to stop for some eats afterward than to come home and cook.

Air-fried Aldi’s sandwich sized breaded pollock fillets and served them on multigrain Kaiser rolls with melted vegan cheddar on top with ketchup and homemade vegan tartar sauce. Also made side salads with maple balsamic vinaigrette. Cheers!🥂

nasty canned progresso, but couldn't resist $1/can and decent deli meat sandwiches - buy an exorbitant lb of roast beef get a lb of ham and provo for "free" so in reality 3 lbs of meat and cheese for around $16. and no prep or cooking for me!
