What's for Dinner, Mon., Feb. 9, 2026

Golden Pear Soup (uses sweet potatoes, white wine, light cream. Mollie Katzen recipe).
Szechuan Tofu Triangles in Triple Pepper Sauce (another Mollie recipe)

Kombucha: pineapple

Dessert: Chocolate chip biscotti and decaf coffee.

A few very sweet black grapes
Cheese (Laughing Cow, sharp cheddar, pepper jack) with Ritz crackers first.

Ducky successfully lobbied for part of a cracker and a little piece of cheddar.

3. Asparagus Steam-Fry

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, sliced carrots. mushrooms, cut asparagus and minced garlic. When done I added crispy tofu, cooked whole wheat spaghetti and a dollop of vegan butter. Vegan tofu on top after plating. Cheers!🥂
