What's for Dinner, Thurs., Jan. 9, 2025

In honor of Jimmy Carter, I made Peanut Soup from my Mollie Katzen recipe collection. It's official name is "West African Peanut Sweet Potato Soup." I haven't made this in years! I figured today would be a good day, though.

It has onions, ginger, cayenne, carrots, veggie stock, V-8, peanut butter, chicken stock, and scallions, parsley, and/or cilantro on top. I have all three to use.

That will probably be enough for me, but if not, I'll cut off a little piece of the breaded cod I bought yesterday from the Polish deli and have it as a half sandwich on artisan bread with tartar sauce and a lemon slice.

A filled red velvet cupcake for dessert, along with a hot mug of Earl Grey.

I snagged it at the store where I work. Originally $4.99 a pound, now $0.99 a pound. Got it for under $10. Last turkey in the store.

And farm-raised in Pennsylvania, no antibiotics, fed organic vegetarian grain.

Perfect size, sort of like a large chicken.

buttermilk biscuits. sausage and scrambled eggs.. I have some homemade raspberry jam left.i have been looking forward to it all day.i may build a fire and roast some marshmallows and hot chocolate.

5. Fish tacos

We're in Casco Viejo in Panama and the restaurant nearby is famous for their fish tacos. I'm told they're very different from Mexican tacos so I'm excited!

We went to the Visitors' Center of the Canal today and watched some ships transit one series of locks. Remarkable.

There was also an IMAX film that detailed the history of Panama, the construction of the canal, the expansion/addition of new and bigger locks and the mechanics of how the locks work. It was narrated by Morgan Freeman, of course.

Coincidentally, today is a national day of mourning in Panama to commemorate those who died in anti-American riots on this date in 1964. Those riots eventually led to President Jimmy Carter negotiating two treaties: One to turn the canal zone over to Panama by 1999 and the other to guarantee American military protection for the canal. President Carter was interviewed for the documentary and when he appeared on screen, many in the audience applauded! It was a humbling coincidence that this national day known as Martyrs' Day fell on the same day as the President's funeral.

6. Turkey Noodle Soup

Using the two turkey legs from the freezer (leftover from Thanksgiving) and one bone-in chicken thigh leftover from last night. I’ve been eating too heavily this week and need something a little lighter. It’s on the stove now, will be ready in about an hour. Don’t have any egg noodles, so will boil up some penne for the noodle part.

Thinking about baking later… don’t know what, yet. Maybe a very small batch of chewy oatmeal cinnamon cookies? Still more or less snowed in so using up butter and sugar on cookies might not be the best idea right now… but my sweet tooth will probably win.

Creamy peanut butter in the squeeze container. I've just had a hankering for peanut butter all day... in fact my first was just minutes after the funeral!

Steam fried in evoo and veggie broth: chopped celery, red bell pepper, onion, sliced carrots, cabbage, minced jalapeño chilies and garlic. When done add more broth, tomato paste, chopped tomatoes and sliced mushrooms. Finally add rinsed canned kidney beans and steamed sweet corn. Flavor with chili powder, chipotle powder, cumin, oregano and cayenne. Mix veggies with cooked brown rice. Sliced fresh avocado on the side. Iced black tea with lime. Cheers!🥂

i liked it so much i figured out it was a1 + Heinz ketchup + onions. good w/ a little red wine.
