I ran into this in the New York Times food section and it’s so stupid easy, I can’t believe this sort of thing hasn’t crossed my radar before. Basically it’s this: cook any grain. When it’s almost done, dump on any kind of chopped greens and any kind of cooked (canned) beans and finish cooking. Season at will. I went sort of Mexican tonight with rice, kale, and pinto beans seasoned with onions, garlic, and chili powder. It’s good, it’s cheap, it’s nutritious, and it’s vegan. The only downside I can see is that I’m going to be eating this for a week because it makes a lot.

(15,261 posts)…I don’t think I could do this in a rice cooker because the greens aren’t going to fit into my little unit. A bunch of greens is big and then cooks down to nothing. I used a Dutch oven.

(4,193 posts)Don't leave cooked rice out too long unless kept over 120 degrees. That is where a rice cooker can help as they automically keep it warm enough.
