What's for Dinner, Sun., Jan. 5, 2025

I've been cooking a lot lately so I have many goodies in my refrigerator to turn to. Because I need a day off, I think I will just avail myself of a bowl of cauliflower-lentil soup and a sandwich for tonight. It's cold out and this will be just the ticket. The sandwich will be meatballs on artisan bread with tomato sauce, red and green peppers, and onion.

Cherry kombucha.

As a dessert, raisin-fig Rainforest crackers with mascarpone and a mug of tea.

It will be a late, late dinner but I am excited. It’s my favorite and it’s been a while. Plus, the snow storm is coming and it will be extra satisfying to snack on the leftovers all day tomorrow. Doing the usual: carrots, onion, garlic, celery, red wine, thyme, crushed tomatoes and juice, stock. I pull the roast out then strain the veggies (keeping the carrots and some tomatoes) to make gravy on the stove with the juices. Sautéed mushrooms. A vat of extra buttery homemade mashed potatoes. Yeeessssss.

It’s going to be a while because I’m just about to start browning the roast, so I might have a quick grilled cheese to tide me over.

Fried wontons stuffed with minced shrimp, ricotta and dried basil. Chinese mustard and plum sauce.
Nuked mixed vegetables.

… and immediately knew I had to have Irish stew. Just moved, everything’s still a mess, boxes everywhere, but I found my damned Instant Pot and made the first real meal in almost three weeks. How I even managed to have an unopened Guinness to dump in it, I have no clue.

Steam fried in evoo and veggie broth: chopped onion, chopped red pepper, sliced carrots, sliced zucchini and minced garlic. When done the veggies were mixed with homemade marinara sauce and chopped broiled salmon which was left over from yesterday’s dinner. Everything was tossed with chickpea rotini. TJ’s Parmesan on top. Cheers!🥂
