What's for Dinner, Fri., Jan. 3, 2025

Hoppin' John. I didn't have much on NY day because of all the other food around here.

I'll be making couscous to go with it.

I have salad with purple and green lettuce plus cucumbers, tomatoes, red onion, and green peppers. Caesar dressing.

Kombucha: blueberry-basil.

Dessert: hope to pick up something at the store today.

Baked boneless breasts. Brine the meat with Kosher saltwater. Mix freshly ground pepper, garlic powder, tarragon and paprika.Coat the breast with olive oil then dust the seasoning mixture on all sides of the chicken. Bake at 450º F for 15 to 18 minutes. I like to kick on the broiler for the last couple of minutes to crisp up the tops.

Yellow rice and fried spicy green beans.

Travel day tomorrow.

Thick NY strip from the little store butcher, pan fried
Corn pudding
Green beans with little gold potatoes and bits of bacon

The pup was underfoot while food was prepared as he waited for what he believes is manna from heaven, but what we believe is accidental spills.

3. Mock Thanksgiving Dinner

Lentils cooked in veggie broth with minced onions, chopped celery, poultry seasoning, bay leaf and sage. Homemade baked stuffing made with stale multigrain bread, chopped celery, apples and onions. Mashed butternut squash with maple syrup. Also made a mushroom gravy and fresh cranberry sauce. We wanted comfort food tonight lol. Saving dessert for tomorrow. Cheers! 🥂
