Let it cool a minute. Quickly stir in one beaten egg. It makes it creamy, not scrambled eggs.

Sometimes I put in sauteed minced garlic before the egg, to help cool the pasta.

Then the Parmesan is stirred in.

Essentially, that's it.

I keep pastina on hand at all times. There's nothing like a bowl with butter and parm to fix my soul.
