Honey Orange Chicken!
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 cup freshly squeezed orange juice (about 2 large oranges)
Zest of 1 orange
¼ cup honey
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions:
Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on each side, about 45 minutes per side, until no longer pink in the center. Remove from skillet and set aside.
Make the Sauce: In the same skillet, add the orange juice, orange zest, honey, soy sauce, apple cider vinegar, and minced garlic. Stir well to combine and bring to a simmer over medium heat.
Thicken the Sauce: Mix the cornstarch with water, then add it to the sauce. Continue to simmer, stirring constantly, until the sauce thickens to a glaze-like consistency, about 34 minutes.
Coat the Chicken: Return the cooked chicken breasts to the skillet, spooning the sauce over each piece until well coated. Let it cook for another 2 minutes to heat through and absorb the flavors.
Serve: Serve the Honey Orange Chicken over rice, garnished with additional orange zest or green onions if desired.
