I have tried the Julia Child white bread recipe a few times and it never comes out very good. I know there are many recipes online, but was hoping someone had one that they trusted and had used it many times.

(107,248 posts)very hearty multi-grain bread from a restaurant that used to served soup in hearty bread bowls during ski season in Jackson Hole, WY. (these "guys" https://bunnery.com/products/osm-bread-mix ) I didn't use their mix but I have one of their cookbooks that I was able to recreate the recipe for my bread machine.
But, sorry no white bread recipes.

(15,019 posts)About as far from Julia Childs white bread as you can get.
100g fed starter. (Aka levain.)
500g whole grain bread flour.
400g room temp water.
10g salt.
Mix flour and water and let rest for 60-90 min.
Mix in starter and let rest for 30min.
Mix in salt and then stretch and fold the dough.
Repeat rest 30 min, stretch and fold 3x.
Let the dough rise about 50% in a warmish place.
Shape the dough for baking.
Slow ferment overnight in the fridge.
Bake in a Dutch oven preheated to 480 covered for 40 minutes
Uncover and continue baking at 440 for 5-10 minutes until nicely brown.
