What's for Dinner, Sun., Dec. 15, 2024

Udon Noodles with Fried Eggplant, Walnut, and Miso

This is an Ottolenghi recipe. In addition to the title ingredients, it has scallions, ginger, shallots, garlic, mirin, soy, and cucumbers.

Small piece of salmon and a few shrimp.

Kombucha: honey-lemon ginger.

Might pick up dessert if I go to the store later.

My wife suggested ut, so I did it.
I roasted parsnips & carrots in the oven first.
Caramelized onions, then added the already cooked shredded chicken. A quarter-cup of sherry.
When reduced, I added the leeks, celery, and after a few seconds, added stock.
When it came back to a boil, I added roasted veggies & gnocchi.
When the gnocchi floated, I turned the heat to very low, and finished seasoning.
Let it steep for an hour.
I got an "unbelievable" from my wife!

based on a recipe in NYT Cooking, modified to use spices I actually have on hand - but since there are probably as many versions in Mexico as there are abuelas I think that's fine. Tastes pretty close to commercial ones I've had, maybe a bit sweeter. It does make a mess of the kitchen, though. It's on the stove simmering, and in an hour or so I'll add the last of the unfrozen turkey.

6. Sweet Potato Bake

Sweet potatoes cut into inch slices, cauliflower florets, chopped yellow bell pepper, celery, red onion, minced garlic, and chickpeas. Toss all ingredients in a large mixing bowl with a couple Ts of olive oil, oregano, parsley and S&P. Pour everything into a 9x13” oiled baking pan. Bake uncovered at 400 degrees for 70 minutes. 10 minutes before done toss on some sliced mushrooms. Squeeze fresh lemon juice on top when done. A super easy dish to prepare or modify. Homemade applesauce on the side. Cheers!🥂

Spaghetti with garlic, red pepper flakes, capers, and anchovies warmed in EVO and chopped parsley and shredded Parm.
