Butternut squash ravioli with pesto.
Spinach, green ruffly lettuce, and arugula salad with fennel and apple sliced on the mandoline. Homemade citrus vinaigrette using crushed fennel seed and also whole fennel seed sprinkled over the salad.
Pomegranate kombucha.
Dessert: My friend dropped off Middle Eastern date cookies last night. They are a filled cookie. The cookie's exterior is like a shortbread. Inside is the date filling. There is a design on the cookie. Ever since he started traveling to the Middle East for work, he brings these cookies back and I get a few of them every now and then.

This is my Chinese Noodles with Cilantro Dressing that I made last night with the pasta that has no wheat in it. This pasta is made with vegetables, notably zucchini, peas, and one other I can't recall.
I really like this pasta. Although it was a gift, I would buy more in a heartbeat. When I told my brother how much Iliked it, he immediately ordered another package for me.
The pic's a little too big. I will downsize it later, when I have a little more time.

(1,143 posts)We went for a winter hike with friends and then afterwards went to our favorite Thai Restaurant for lunch. They have a large selection of vegan choices which we love. While there we decided to order takeout for dinner. At 7pm well have Tom Kha Gai soup made with coconut milk and tofu to start and then well be sharing an order of Pad Prik King, a spicey dish with green beans and red peppers. Rice on the side. Cant wait to dig in. Cheers! 🥂

(1,773 posts)with grapefruit as a side. I made a double portion and the other half is to be for a church potluck tomorrow, which may or may not happen because of icy roads here in Iowa (and an interim pastor who drives an hour and a half to conduct the service).
I also made sour cream cookies today. I frosted and decorated some for the potluck, but the majority is for a Christmas party at my evening job. A couple unfrosted ones were dessert for my husband and me

Sounds like he does all the cooking for the family.
