What's for Dinner, Tues., Nov. 19, 2024

Coconut Lemongrass Soup. Has coconut milk, vegetable broth, curry powder, lime juice, tofu, Thai basil, cilantro, garlic, ginger AND lemongrass which I will be delighted to use from my lemongrass plant. AKwannabee helped me with that.

Salmon with mango salsa (homemade).

Small green salad with lettuce and cucumber slices.

Dessert: (probably won't get this far, but if I do) Pumpkin muffin half with decaf coffee.

I am going to use what I have here.

A bratwurst and cheddar patty from the freezer and buttered noodles.

Terrible weather lately and more than depressing election hangover still hanging in there. It’s my day off and can’t work up the effort to go anywhere for supplies or food.

4. Bean and Veggie Burritos

Steam-fry sliced red and green peppers, yellow squash, onions, mushrooms and garlic. Add black beans and spices. We use Joseph’s lavash flatbread instead of tortilla shells because we enjoy the taste better. Fill the flatbread with the veggie/bean mixture and sprinkle with vegan cheddar and microwave to melt cheese before rolling up. Top with freshly made guacamole and pineapple corn/bean salsa. Green tea with lemon to wash it down. Cheers! 🥂

We went with our friends before the restaurant got busy. Loretta had a ice cream dessert after eating tacos.
