I suppose that would be good with tequila, too.
We could call is a Bloody Toro.

Of course if you really like them hard, this is immaterial. I like them hard for a fried egg sandwich

(13,767 posts)I like them done in a little butter and just set--not dry. A nice bit of fresh cracked black pepper on top.
Most of the time I get them fried and over easy because it is easier.

This is why I always take the check. We share our accounts, so I am just sparing the servers the sexist jokes. He now tells them "I'm a kept man" if they put the check in front of him, and he motions for them to give it to me. One of these days I will figure out how to deal with him. It's been 24 years now.

(2,551 posts)Not mixed up to the point of being a uniform yellow, but just two or three passes with the mixing implement, so that the eggs are swirls of white and a darker yellow. I want them lightly scrambled like that, and with a little diced ham and chopped onions and cheese added, and then cooked just to the point where they are not quite runny. Or, they can still be just a little runny in a couple of spots, but barely cooked that much. It's hard to get them cooked just like this in a restaurant, and I actually feel a little guilty asking the waitperson and cook to fix them to such precise instructions, but that's the way I like them best.

(599 posts)Heat the pan to medium-low, add a little butter (or canola), crack two eggs in the pan, break the yolk, fry until the outside whites are done, flip the eggs, fry a little more, place the eggs on lightly buttered deli-swirl rye (or Aldis 12 grain if available), top with another slice of buttered bread, and slice the sandwich diagonally. Enjoy!
I'm easy to cook for-just do it right.

(5,376 posts)plus toast with butter and strawberry preserves for soaking up the yolky goodness, a side of bacon or fried ham, and a small pile of diced tomatoes. Almost had that for dinner two nights ago but got nervous because of bird flu. I know its unlikely, but something about delicious, half-cooked runny eggs made me stop. Instead, I went with option two: well cooked scrambled eggs with a little bit of finely diced onions, bell peppers, mushrooms, spinach, and ham (all cooked in the butter before adding the eggs), topped with cheddar and half a slice of American to tie it all together. And Cholula.
I like egg.

I joined some former co-workers for late breakfastearly lunch today, after an indoor mall walk, and got a massive omelette called The Frenchie - sauteed wild mushrooms, caramelized onions, bacon and brie. It was scrumptious, and I would definitely order it again. There is enough left to have it again for tomorrow's lunch.
